The Spring Fling
An unexpected pairing of Rhubarb Shrub, gin, and fennel makes for a light and refreshing cocktail to enjoy while tip-toeing through the tulips or dreaming of daffodils.
1 1/2 oz. Gin (may substitute vodka)
1 oz. Tait Farm Rhubarb Shrub
1 sprig fresh fennel, plus another to garnish
Add gin or vodka, shrub, ice, and 1 sprig fennel to cocktail shaker. Shake vigorously and strain into a highball or rocks glass. Top with club soda and garnish with additional sprig of fennel. Gently stir before serving.
