Savory Meatballs with Pepper Jelly Glaze
These sweet, sour, and slightly spicy meatballs are simply delicious! The heat of the glaze is beautifully balanced by the savory soy sauce. Enjoy as an appetizer or main meal served over rice.
For the meatballs:
1 lb. ground chicken or turkey
1/2 C. breadcrumbs
1 small onion, finely minced (1/4 C.)
1 tsp. salt
1/2 tsp. black pepper
For the glaze:
1 jar Tait Farm Pepper Jelly (Apple or Cranberry)
2 Tbs. tamari soy sauce
1/4 tsp. garlic powder
freshly chopped cilantro, peanuts, or cashew
Preheat oven to 350°F. Combine all meatball ingredients. Form into small meatballs (1” in diameter). Place in a single layer on a baking sheet. Bake for 30 min., or until cooked through.
In a small saucepan, combine glaze ingredients and stir over medium-low heat until liquified. Pour over the hot meatballs. Toss to coat. Garnish and serve immediately.
