Greek Orzo Salad

Our Greek Orzo Salad is a longtime, Tait Farm favorite. No matter the time of year, it makes a tasty lunch or side dish. Looking for a main meal? Add grilled chicken to it!

Salad Ingredients:

4 C. cooked orzo

3 C. baby or chopped spinach

½ C. chopped fresh dill

½ C. feta cheese

½ C. Kalamata olives

1/4 C. pine nuts or pepita seeds

½ C. Lemon Vinaigrette

Cook the orzo as directed. Allow to cool. Combine all ingredients and serve right away or several hours later.

SERVES: 6 - 8
