fRESH fRUIT crêpes

INGREDIENTS:

  • Crêpes (homemade or purchased)

  • Fresh fruit: blueberries - strawberries - raspberries - blackberries, or pitted cherries

  • Tait Farm Dessert Sauces of your choice

Ingredients for homemade crêpes:

2 large eggs

10 oz. whole milk (1 1/4 C.)

1 C. all purpose flour

1 Tbs. sugar

pinch of salt

1 Tbs. melted butter

Place all ingredients in a blender or processor. Blend well. Refrigerate for 2 hours or more.

Heat 1 tsp. of butter in a 10” non-stick skillet. Pour 3-4 Tbs. of the batter into skillet. Working quickly, tilt and swirl the batter in the skillet to coat the bottom of the pan. Cook for about 20 seconds or until the bottom is lightly browned and the top looks dry. With a thin spatula flip the crepe onto the other side. Cook for another 10 seconds. Makes about 8-10 crêpes.

To fill: place fruit in one quarter of the crêpe. Fold the quarters over to make a neat packet. Drizzle with the chosen sauce.
