Black Bean Fusion Salad with Chutney DressingA zesty and flavorful salad that’s simple to make. Great as a side dish or light lunch.
2 C. cooked black beans, rinsed and drained 2 ears of corn, boiled and scraped 2 C. diced fresh garden tomatoes 1 avocado, diced 1/2 C. fresh cilantro or parsley, chopped Dressing: 1 jar of Tait Farm Mango or Ginger Peach Chutney 6 Tbs. oil (canola, sunflower or olive) juice and grated rind of one lime salt to taste Combine all ingredients and chill. Serves 8 |
