Caribbean Pineapple Spritz

Our fruit-forward pineapple shrub pairs perfectly with coconut sparkling water to create this refreshing summer cocktail.

​½ C. Tait Farm Pineapple Shrub

½ C. white rum*

1 can coconut seltzer

1 C. diced pineapple pieces

Crushed ice

Cocktail umbrellas (optional)

Put pineapple pieces in a cocktail shaker, along with the pineapple shrub. Muddle until pineapple has broken down into a mush (shortcut: use canned crushed pineapple). Add rum and shake.

Strain into two glasses. Top with crushed ice and coconut flavored seltzer.

Serve with pineapple wedge garnish and if desired, a cocktail umbrella.

*Omit rum for a refreshing mocktail
